Nicholson began his culinary career in high school where he worked at casual restaurants like diners and pizza places. After attending The Texas Culinary Academy, the Mississippi native took his skills to Enoteca and Vespaio for two years. Now a chef at Barley Swine, Nicholson notes that cooking has always given him the greatest joy and names Justine’s as his favorite restaurant.
