Sushi and Sake SommChat Experience

At the beginning of February, Keeper Collection paired up with Chef Masazumi Saio at Uroko and Master Sake Sommelier Timothy Sullivan of Urban Sake to create a virtual Sushi and Sake experience. This experience offered over Zoom was hosted by our very own marketing intern, Catherine Murchison.

Guests received their own sushi and sake kit which included rice, nori seaweed, avocado, cucumber, tuna, salmon, crab sticks, seasonings for the sushi, and sauces. The kit also offered four different sakes of Hakkaisan Snow Age Born, Gold Junmai Daiginjo, Hakkaisan Tokubetsu Junmai, and Kikusui Funaguchi.

The event opened with Chef Masazumi describing the proper way to prepare sushi rice and Master Sake Sommelier Timothy Sullivan describing the first pairing of Kikusui Funaguchi sake. Chef Masa guided guests to make a California roll, which included learning how to use a traditional bamboo mat.

Later, guests had the opportunity to learn how from Master Sommelier Timothy about Hakkaisan Snow Age sake is stored under 1,000 tons of snow for up to three years at three degrees Celsius. Chef Masa demonstrated how to make the filling for a spicy tuna roll. Attendees learned about the secret ingredients which Chef Masazumi uses to create this filling for his dishes at Uroko.

The last dish allowed attendees to use their remaining ingredients to create a hand roll with the nori seaweed. Pictured is the creation of a salmon hand roll with cucumber and avocado. Master Sake Sommelier Timothy Sullivan recommended the Hakkaisan Tokubetsu Junmai to accompany this dish.

Intern Catherine Murchison did a superb job of asking questions to Chef Masazumi and Master Sake Sommelier Timothy Sullivan. Some featured questions included how sake is made and how to properly roll the sushi so that ingredients do not fall out.
