@C_McFall (Paggi House): A3. There are challenging Varietals to pair w/ #food in general, but most difficult for me is a modern #Zinfandel w/ high alcohol content #SommChat

@C_McFall (Paggi House): A3. The robust flavors, high #tannin, and high alcohol of modern #Zinfandel do not lend themselves to an elegant #food pairing. #SommChat

@C_McFall (Paggi House): A3. This doesn’t go for all #Zinfandel, but the new age style presents problems as progression from one course to the next… #SommChat

@C_McFall (Paggi House): A3. A high alcohol, high tannin #wine doesn’t leave a lot of room for an additional course. The palate becomes exhausted quickly. #SommChat

@C_McFall (Paggi House): A3. But there are perfect pairings out there for #Zinfandel, i.e. Short Ribs, Briskets, Roasted Meats etc. #SommChat
