Jeremiah Morehouse @keepercoll: Went to school in Santa Cruz & started in restos at age19. At 21 I changed to working in a #wine bar. For some reason the owner really liked me and decided I should be the guy at his resto. That was the 1st break into #wine and beverages and I fell in love with it. #SommChat

Jeremiah Morehouse @keepercoll: Chef’s signature dish is his horseradish salmon & my fav pairing with this all year long is Clos Cibonne Rose - small estate in Provence very unique very rare wine and pairs beautifully with all the spices in the dish….. #SommChat

Most impt thing is 2 read guests & what they want. Each table is different & what they want is diff, U have 2 B able to read this and adjust faster or slower processes to give them their best experience #SommChat

Jeremiah Morehouse @keepercoll: We get both travelers & have very loyal local clientele. As far as staff input any time dish is changed R created, I always taste W/ staff there & taste 7 R 8 #wines 2C how the dish changes. Some change > frequently than others depending on season and avail. of #wine #SommChat

Sommbuddy @Sommbuddy1: At our Las Vegas steakhouse, we get more tourists in the winter and more locals in the summer at a 70/30 ratio. 3 basic concepts shine through for our wine pairing; charred steaks with modern fruit forward wines, grilled steaks with traditional fruit forward...

Sommbuddy @Sommbuddy1: And slow roasted meats like prime rib with old world wines that are less fruit forward and may have notes of sanguine. All while focusing on texture, lean soft meats like filet mignon with pinot noir and tannic wines with ribeyes. Also a nod to cooking temperature. Enjoy!

Jeremiah Morehouse @keepercoll: From my perspective what I would like to see from the industry is more education put forth - i.e. more ppl helping others. I think there are a lot of ppl doing a lot. But I think industry wide there are many that can do more, myself included. #SommChat

Jeremiah Morehouse @keepercoll: We buy very little from auction - we do buy from Consignment houses/3rd party agents but I have only worked with ppl that guarantee Provenance. So bc of this approach, I did not get burned on those #Wines. #SommChat

Jeremiah Morehouse @keepercoll: It is very competitive - there is not a shortage of #Sommeliers, there is a shortage of true #Sommelier floor positions…. #SommChat

Jeremiah Morehouse @keepercoll: What’s happening here is there are a lot of restos and very expensive to run a resto Bc of numerous costs. Many restos will hire #Somm in managerial position & not 100% on floor even Michelin Star restos. At Gary Danko we have remained old School #Somm Service #SommChat

Jeremiah Morehouse @keepercoll: At Danko since I took over I started a small LT aging program based upon annual allocations, we are #SF and don’t have a lot of space so not possible to do in large volume…. #SommChat

Jeremiah Morehouse @keepercoll: The decision to add back to program is purely based upon when the #wine is deemed to be ready to drink - case by case basis. We try to keep list up to date and accurate - may have a few wines held back for special occasions. #SommChat
