As far as staff input any time dish is changed R created, I always taste W/ staff there & taste 7 R 8 #wines 2C how the dish changes. Some change > frequently than others depending on season and avail. of #wine #SommChat
Sommbuddy @Sommbuddy1: At our Las Vegas steakhouse, we get more tourists in the winter and more locals in the summer at a 70/30 ratio. 3 basic concepts shine through for our wine pairing; charred steaks with modern fruit forward wines, grilled steaks with traditional fruit forward...
Sommbuddy @Sommbuddy1: And slow roasted meats like prime rib with old world wines that are less fruit forward and may have notes of sanguine. All while focusing on texture, lean soft meats like filet mignon with pinot noir and tannic wines with ribeyes. Also a nod to cooking temperature. Enjoy!

Jeremiah Morehouse @keepercoll: The decision to add back to program is purely based upon when the #wine is deemed to be ready to drink - case by case basis. We try to keep list up to date and accurate - may have a few wines held back for special occasions. #SommChat
